Commercial refrigeration equipment is equipment used for storing foods, to merchandise food purposes in the retail industry for example supermarkets and also in the food service industry. It can also be described as equipment that gives cold storage for a dining facility or a commercial kitchen. It includes commercial freezers, self- contained and remote condensing refrigerators, commercial refrigerator freezers and commercial ice- cream freezers.

The lower temperature in the refrigerators helps to lower the rate at which the bacteria that causes food spoilage to reproduce. Optimum temperature for storage of perishable food is 3 to 5 degrees Celsius. A refrigerator is supposed to maintain a temperature above water freezing point. Foods like meat, eggs, poultry, sea foods, dairy products, raw seeds sprout and cooked rice or potatoes promote the growth of bacteria. If left for four hours in 41 degrees to 135 degree the foods can be hazardous.
Another preventive maintenance for temperature optimization is by maintaining your commercial refrigerators between 34 degrees and 40 degrees Fahrenheit. To maintain this temperature one should use refrigerators thermometer. This low temperature helps to prevent food spoilage, growth of micro organisms and also spoilage of enzymes.
One should also keep the freezer at zero degrees or even below to maintain the quality of the frozen foods. The foods in the freezer will last for long if they are stored in temperatures of between -10 to 20 degree Fahrenheit. In fluctuating temperatures the food will get spoilt easily because the micro organisms will grow under warmer temperatures. Other freezers which are known as self –defrosting freezers damage food quality because of the fluctuation of temperatures in them. Even though storing foods in freezers keeps the food from spoiling, it does not stop the foods from changing in color, losing the flavor and it also loses the nutritional quality of the food.
When foods that are stored in the refrigerators are thawed at room temperature, micro organisms grow at the food surface due to warming of the food. The freezers temperature keeps the food from spoiling but they do not destroy the spoilage micro organism. This shows that it is not healthy to eat foods that are directly refrigerated to avoid falling sick or even resulting to death due to the spoilage micro organisms.
One should also dust off his or her condenser coils which are on the rear. The coils help in proper air flow in the refrigerator. One should use a condenser coil brush to remove hairs and dust in the coil. When the air in the coil is blocked, there will be no air circulation causing the refrigerator to have bad odors which may result to food spoilage affecting any person who will consume the foods The refrigerators at home or even the commercial refrigeration equipment should be kept at optimum temperature to avoid food spoilage and growth of food spoilage micro organisms and keep the food for a longer period.
